Рецепт Супа-пюре из тыквы с шампиньонами

 

Суп-пюре из тыквы с шампиньонами

Осенний сезон - идеальный для приготовления супов - теплых и густых. Чтобы согреваться и насыщать себя витаминами и приятным густым вкусом. Я уже публиковала Рецепт супа-пюре из баклажан.

Ингредиенты:

  • Тыква - 1 шт. (маленькая)
  • Нут (или горох) - 100 г.
  • Шампиньоны - 5 свежих или баночку консервированных
  • Лук-порей - 1 шт.
  • Морковь - 1 шт.
  • Томат - 2-3 шт. (или перец 1 шт)
  • Кокосовые сливки (или обычные сливки) - 2-3 ст. ложки
  • Специи и соль по вкусу

Способ приготовления:

Заранее нужно замочить на ночь нут (горох), а потом отдельно его варить 40-60 минут. Или использовать нутовую муку (или немного простой муки для вязкости). Если шампиньоны свежие, то нарезаем вдоль гриба пластиками, тушим, оставляем немного кусочков для украшения супа). Тыкву тоже можно приготовить несколькими вариантами: запечь или потушить с другим овощами.
 
Нарезать порей, натереть морковь, слегка обжарить в сотейнике. Удалить кожицу с помидор и нарезать кубиками. Можно использовать томатный сок. Порезать мелко перец. Добавить к луку и моркови. Добавляем сюда же тыкву (если заранее не запекали), перемешиваем и тушим 5 минут. 

Затем добавляем в сотейник воду или любой готовый бульон + специи. И даем готовиться овощам под крышкой 12-15 минут.

Нут (горох) + готовые овощи + шампиньоны блендерим до однородной массы. Добавляем кокосовых (обычных) сливок, украшаем шампиньонами, семенами (например, тыквенными)  можно посыпать зеленью или все, что может порадовать ваш глаз!

Recipe "Olivier" salad (Russian salad)

   Olivier salad is the main dish at Russian New Year's dinners. The history of this salad began around 1860. Chef Lucien Olivier, who worked in a Russian restaurant in Moscow, created this recipe. The salad became very popular with customers. With food shortages during the 1917 revolution, the salad recipe was greatly simplified. And so it found its way onto all the tables of the Russian people. Ingredients: 3-4 potatoes; 1 carrot; 1-2 chicken eggs; 100 g green peas; 3-4 pickles; 200-300 g ham green onions; mayonnaise to taste. Potatoes and carrots should be cooked in their skins.
